All my life I’ve said that I don’t like cold weather. What’s to like about winter anyway? It’s cold, it’s wet, it’s grey. I still don’t like to be cold, but as I’ve gotten older I’ve come to appreciate the winter season. Instead of focusing on the cold, I try to savor things that I do love about this season. The crisp air; the sights, smells, and sounds of Christmas which is my favorite holiday; a fire in the fire place; and cuddling up on the couch under a blanket are just a few of my favorite cold weather things. The beauty is there, you just have to stop and appreciate it for what it is. And it doesn’t hurt to be prepared. Coats, scarves, boots, heated car seats, and hot chocolate. Yes, hot chocolate is definitely a necessity. This recipe is rich and smooth and it will warm you right up.
2 T Cocoa powder
1/2 C Water
2 C Whole milk
4oz Semi-sweet chocolate, finely chopped
2 T Sugar
1/2 tsp Vanilla extract
1/8 tsp Ground cinnamon
Generous pinch of salt
Whipped cream for serving
In a small sauce pan bring water to a boil and add cocoa powder. Stir until smooth. Add milk and heat until bubbles begin to form around the edge of the pan.
Add chocolate and and stir until melted. Stir in sugar, vanilla, cinnamon, and salt.
Ladle into mugs and serve warm with whipped cream.
