I’ve always been a breakfast eater and oatmeal has been one of my favorites since I was a little girl. My mom used to make it for me with a little butter and sugar. Then I went through brown sugar and raisins phase when I was in college. Then I discovered overnight oatmeal and breakfast has never been the same again. I love how the oats retain their texture and don’t turn to mush. Plus, it’s so easy to experiment with different flavors. This is one of the combinations that I keep going back to again and again.
Lemon and Thyme Overnight Oatmeal
1 cup oats (not instant)
1 1/2 cups milk
3 pieces of lemon rind
1/2 tsp lemon juice
2-3 Tbs honey (depending on how sweet you want it)
1 sprig thyme
1/8 tsp ground ginger
Combine all ingredients in a mason jar or other container and shake gently to combine. Store in the refrigerator overnight. In the morning shake gently, spoon into a bowl and enjoy for breakfast. You can have it cold or warm it in the microwave. This makes two servings and will keep in the fridge for 3-4 days.
