Avocado Lime Ranch Tiny Toasts

I’m sure I’m the last person on earth to think of this, but I had a brilliant idea the other day. What if I bought Ranch seasoning packets and put them in plain Greek yogurt for a dip? Brilliant, right!?! Well I tried it and it turns out that it is really delicious and aside from the sodium content in the seasoning at least you can feel good about smothering your carrot sticks and broccoli florets in the yummy ranch flavored goodness because the yogurt is so good for you.

After snacking on this for a few days I decided to take it up a notch and make these Avocado Lime Ranch Tiny Toasts as my afternoon snack yesterday.

Somehow I managed to not eat every single one of them and had some for my husband as an appetizer when he got home for work while I was finishing up dinner. He was also a huge fan. I had just a little bit of the mixture left over and Camille finished it off with her dinner. She takes after me and believes that avocado is quite possibly the most delicious thing she ever put in her mouth. I think the little toasts are so cute and make anything you eat on them more fun.

When I make something for the first time, I don’t bother to take photos because I usually have to tweak something before sharing it here. I just felt like this was going to be a winner, so I went ahead and took them and I’m so glad that I did. Although, I’ll definitely be making these again soon. This is quite possibly the easiest and most delicious appetizer or snack you’ve ever eaten.

Avocado Lime Ranch Tiny Toasts
This simple and delicious combination is perfect for a healthy afternoon snack or appetizer since we swap the usual sour cream ranch base for Greek yogurt.
Prep Time 15 minutes

16 toasts
Ingredients
  • 1/2 avocado large
  • 1/2 cup canned black beans drained and rinsed
  • 1/3 cup frozen corn thawed
  • 2 Tbsp Greek yogurt ranch dip follow instructions on ranch dip seasoning packet except substitute Greek yogurt for the sour cream
  • 1 tsp lime juice
  • 16 tiny toasts
  • chives chopped for garnish

Ingredients
  • 1/2 avocado large
  • 1/2 cup canned black beans drained and rinsed

  • 2 Tbsp Greek yogurt ranch dip follow instructions on ranch dip seasoning packet except substitute Greek yogurt for the sour cream
  • 1 tsp lime juice
  • 16 tiny toasts
  • chives chopped for garnish
Instructions
  1. Put avocado, corn, and black beans in a bowl.
  2. Add Greek yogurt ranch dip and lime juice
  3. Mix gently so as to not mash up the avocado.
  4. Spoon onto tiny toasts and top with chives.
