Pasta with Black Truffle Parmesan Cream Sauce and Shrimp

I’ve been working on this recipe in my head for a little over a week now. I’ve been thinking about it constantly. Even dreaming about it. The reason being that my husband bought some truffles for a special dinner and he made an amazing risotto. We had one truffle left and he said that I could use it! I’m usually cooking for toddlers, so truffles are not typically on my ingredient list. And I only had one, so I only had one chance to make something else equally delicious. This simple and quick dish did not disappoint. I love when I get it right on the first try! If you happen to have an extra black truffle laying around, you’ve got to try this pasta dish.

Ingredients
  • 2 Tbsp olive oil
  • 1 lb shrimp peeled and deveined
  • 1/4 cup onion finely chopped
  • 2 Tbsp cooking sherry
  • 1/2 cup heavy cream
  • 1/2 cup Parmesan cheese grated, plus more for serving
  • 2 tsp black truffle grated, reserve 1/2 tsp for serving
  • 8 oz dried penne

Ingredients
  • 2 Tbsp olive oil
  • 1 lb shrimp peeled and deveined
  • 1/4 cup onion finely chopped
  • 2 Tbsp cooking sherry
  • 1/2 cup heavy cream
  • 1/2 cup Parmesan cheese grated, plus more for serving
  • 2 tsp black truffle grated, reserve 1/2 tsp for serving
  • 8 oz dried penne
Instructions
  1. Prepare pasta according to package instructions. Reserve 1 cup of pasta water.
  2. Add 2 Tbsp olive oil to large saute pan. Add shrimp and brown lightly on both sides over medium-high heat. Set aside.
  3. Reduce heat to medium and add additional Tbsp of olive oil to pan if necessary. Add onion and cook until translucent. Add sherry and deglaze any brown bits from bottom of pan.
  4. Add cream and cheese and stir until melted and combined. Add truffle and stir to combine.
  5. Add pasta and shrimp to pan and stir to coat. If sauce is too thick add a little of the reserved pasta water to thin it to desired consistency. Divide into 4 bowls and serve with additional parmesan cheese and reserved truffle.
