Pasta with Black Truffle Parmesan Cream Sauce and Shrimp
1lbshrimppeeled and deveined
1/2cupParmesan cheesegrated, plus more for serving
2tspblack trufflegrated, reserve 1/2 tsp for serving
Prepare pasta according to package instructions. Reserve 1 cup of pasta water.
Add 2 Tbsp olive oil to large saute pan. Add shrimp and brown lightly on both sides over medium-high heat. Set aside.
Reduce heat to medium and add additional Tbsp of olive oil to pan if necessary. Add onion and cook until translucent. Add sherry and deglaze any brown bits from bottom of pan.
Add cream and cheese and stir until melted and combined. Add truffle and stir to combine.
Add pasta and shrimp to pan and stir to coat. If sauce is too thick add a little of the reserved pasta water to thin it to desired consistency. Divide into 4 bowls and serve with additional parmesan cheese and reserved truffle.
