Roasted Fingerling Potatoes and Baby Carrots with Garlic Dill Butter

Ingredients
  • 1lb fingerling potatoes
  • 1/2lb baby carrots
  • 2Tbsp olive oil
  • salt and pepperto taste
  • 2Tbsp unsalted butter
  • 3Tbsp fresh dillchopped
  • 2cloves garlicminced
Instructions
  1. Preheat the oven to 425 degrees F. Wash potatoes and cut larger ones in half so that everything is roughly the same size.
  2. Place potatoes and carrots on pan. Drizzle with olive oil, salt and pepper. Toss to coat evenly. Cook for 15-20 minutes or until edges have started to brown.
  3. While the vegetables are roasting melt the butter in the microwave (about 30-45 seconds). Mix in the chopped dill and garlic
  4. When the vegetables are finished pour the butter mixture on top and toss to coat. Serve immediately.
